Russian Beet Salad

I'm from a Russian background and my grandmother created the most delicious dishes with beets as the main ingredient.  Her Russian Beet Salad was one of my favorites.

This recipe serves 3 but you can double up and make a little more. It is really worth the time! Remember, beets are a good source of vitamin C and potassium. 

Serves: 3 Preparation: 30 – 40 minutes

 

INGREDIENTS:

 

  • 8 healthy (2 1/2 inch diameter) beets
  • 1/2 c. cider vinegar
  • 1 med. clove garlic, crushed
  • 2 tsp. honey
  • 1/2 c. minced red onion
  • 2 scallions, minced (whites and greens)
  • 1 med. cucumber, seeded and finely chopped
  • 2 hard boiled eggs, chopped
  • 2 tbsp. fresh dill, minced (or 1 tsp. dried dill)
  • 2 c. mixed sour cream and yogurt
  • Salt and pepper to taste

DIRECTIONS:

  • Boil the beets, whole, for about 20-25 minutes
  • Rinse under running water as you rub off their skins Chop into 1/2 inch bits and while they are still warm, marinate them in vinegar, garlic and honey
  • Let stand 30 minutes.
  • Add all remaining ingredients
  • Mix well and chill until very cold.

Sounds absolutely delicious Alexandra, I am looking forward to serving your Grandma's salad, spring is on our doorstep here in Australia so the bbq days are also approaching! Thanks so much for sharing!

It is delicious Deborah! My Grandma could come up with so many beet dishes and just by changing a few ingredients, it tasted so different. It’s fun to experiment! Happy spring!
